When traces of gluten are found in your food, they can cause extensive damage to your gut and to other organs indirectly by increased inflammation.
Gluten is composed of proteins called Glutenin and Gliadin. When your body tries to digest gluten it can create dangerous smaller proteins called immunogenic peptides. They are named immunogenic because they can trigger inflammation in your body. This inflammation damages your small intestines, to the point that they no longer work properly, as a result your body cant absorb nutrients to be healthy. This means you have a higher chance of getting certain cancers, heart conditions, anemia and neurological problems.
